Healthier Olive Oil Scrambled Eggs

What You’ll Need:

2 eggs or 3 egg whites

1 teaspoon milk

1 teaspoon Queen Creek Olive Mill Bacon Olive Oil

Salt and pepper to taste

The Method:

Perfect, healthy and tasty scrambled eggs. There is more to just mixing eggs and cooking! This recipe can be prepared using Queen Creek Olive Mill Bacon, Garlic, Chili, Basil or Delicate Olive Oil. Serve with our seasonal Peach Caponatina Tapenade or pesto on the side. Use 3 egg whites for an even healthier alternative.

In a cup or small bowl, whisk together the eggs and milk. For fluffier eggs whisk vigorously.   Add olive oil to a non stick skillet over low heat. Make sure the olive oil covers the entire skillet. Pour in the eggs, and with a spatula stir constantly as they cook. Remove the eggs to a plate when they are set, but still moist. Do not overcook. Salt and pepper to taste.
