Penne alla Vodka
Yield: 6 servings
- 1 onion, finely chopped
- 2 tbsp QCOM Garlic Olive Oil
- 18 oz canned chopped tomatoes
- 2 tbsp heavy cream
- 1 lb package penne pasta
- 1/2 cup vodka
- 4 tbsp butter
- Parmesan cheese, for grating at the table
- salt and pepper to taste
In a large saucepan, heat the oil and add the onion, season with salt and cook over low heat for 15 minutes, stirring often, until glassy. Add the tomatoes and vodka to the onion and continue to cook for 15-20 minutes. Wisk in the cream and take off the heat. Cook penne as directed on package. Add the sauce and toss to coat. Serve immediately, grating Parmesan at table.
