Honey and Mint-Marinated Lamb Chops

The combination of honey, mint and blood orange enhances the lambs delicate flavor.

Yield: 6 servings

  • 1/4 cup fresh mint, chopped
  • 2 tbsp QCOM Balsamic Vinegar
  • 2 tsp ground cumin
  • 1 tsp dry mustard
  • 2 tbsp QCOM Blood Orange Olive Oil
  • 2 tsp honey
  • salt & pepper to taste
  • 8 (4oz) lamb loin chops, about 1” thick

Combine all ingredients except lamb. Place lamb in a single layer in a shallow dish; rub spice mixture evenly over both sides. Cover and refrigerate for 4 hours. Prepare grill. Grill 4 minutes on each side for medium rare or longer for medium.

Wine pairing: Zinfandel.
