Honey and Mint-Marinated Lamb Chops
The combination of honey, mint and blood orange enhances the lambs delicate flavor.
Yield: 6 servings
- 1/4 cup fresh mint, chopped
- 2 tbsp QCOM Balsamic Vinegar
- 2 tsp ground cumin
- 1 tsp dry mustard
- 2 tbsp QCOM Blood Orange Olive Oil
- 2 tsp honey
- salt & pepper to taste
- 8 (4oz) lamb loin chops, about 1” thick
Combine all ingredients except lamb. Place lamb in a single layer in a shallow dish; rub spice mixture evenly over both sides. Cover and refrigerate for 4 hours. Prepare grill. Grill 4 minutes on each side for medium rare or longer for medium.
