Frittata (Italian Omelette)
Great for a Sunday brunch or any large crowd
Yield: 6 servings
- 12 eggs
- 1/2 cup heavy cream
- 1 pinch of salt
- 1 pinch of pepper
- 1/2 cup asiago or parmesan cheese grated
- 1/2 yellow onion, small diced
- QCOM Tuscan Estate Extra Virgin Olive Oil to sauté
Preheat oven to 400. In a bowl whip first 4 ingredients together. In a large oven-safe sauté pan, heat 1 tablespoon oil and sauté onion until translucent. Add egg mixture and cook just until bottom is beginning to set. Place in oven and allow the frittata to cook until golden brown on top. Remove from pan and allow to cool for 5 minutes. Cut into wedges like a pizza and serve with roasted potatoes and toast.
