Fresh Mediterranean Salad
Yield: 6 servings
- 3 1/2 cups English cucumbers, thinly sliced
- 2 tsp kosher salt
- 2 tbs green onions, minced
- 1 tbs QCOM White Balsamic Vinegar
- 6 roma tomatoes, cut in quarters
- 5 oz (1/2 jar) QCOM Oregano Feta Stuffed Olives, drained
- 1 tsp sugar
- 1/2 tsp red pepper flakes
- 1/2 tsp QCOM Tuscan Estate Extra Virgin Olive Oil
Combine cucumbers and kosher salt, tossing well. Let stand at room temperature for 20 minutes. Drain and squeeze dry. Combine remaining ingredients. Allow to marinate for 1 hour, serve chilled or at room temperature.
