Florentine Green Beans and Potatoes
Use this as a side for meat or chicken.
Yield: 6 servings
- 1 cup QCOM Tuscan Estate Extra Virgin Olive Oil
- 2 lbs fresh green beans, cleaned and trimmed
- 1 large onion, finely chopped
- 4 medium potatoes, cubed
- 3 cloves garlic, minced
- 1 bunch parsley, finely chopped
- 1/4 cup water
- 1/4 tsp sugar
- salt and pepper to taste
Sauté the onion in the olive oil until translucent. Add green beans and all other ingredients except potatoes. Cook for 20 minutes and then add the potatoes. Cook for another 20-30 minutes or until the potatoes can be cut with a fork. Salt and pepper to taste.
