Chicken Cacciatore

Yield: 6 servings

  • 1 chicken, cut into pieces
  • 2 tbsp butter
  • 3 tbsp QCOM Tuscan Estate Extra Virgin Olive Oil
  • 1 onion, diced
  • 6 tomatoes, seeded, peeled and chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1/2 cup Italian flat leaf parsley, chopped
  • 2/3 cup chicken stock
  • Salt and Pepper to taste

Put chicken in a flame-proof casserole with butter, QCOM Tuscan Estate Extra Virgin Olive Oi, and onion. Cook over medium heat stirring and turning frequently, for about 15 minutes until browned. Add tomatoes, carrot, celery, and water. Cover and simmer for about 45 minutes until chicken is tender and cooked through. Sprinkle with parsley and season with salt and pepper. Serve over pasta.

Wine pairing: Pinot Grigio or a white table wine.
